  • 12 oz penne pasta cooked al dente
  • 1 tbsp olive oil
  • 2 chicken breasts cut into bite-sized pieces
  • salt and pepper to taste
  • 2 cups marinara sauce store-bought or homemade
  • 0.5 cup pasta water reserved from boiling pasta
  • 0.25 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 1 cup mozzarella cheese shredded
  • fresh basil optional, for garnish

Instructions
 

  • Boil penne pasta according to package directions until al dente. Reserve ½ cup pasta water, then drain pasta.
  • Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook for 5–7 minutes until browned and cooked through.
  • Stir in marinara sauce, Italian seasoning, garlic powder, Parmesan, cooked pasta, and reserved pasta water. Bring to a gentle boil, then reduce heat to medium-low.
  • Simmer for 4–5 minutes to blend flavors and thicken sauce.
  • Remove from heat. Sprinkle mozzarella over top, cover skillet, and let sit for 5 minutes until cheese melts.
  • Garnish with fresh basil and serve hot.

Notes

Use good quality marinara and freshly shredded cheese for the best results. Try adding sautéed veggies like mushrooms or spinach for a nutrition boost.
