Preparation

  • Prepare the Lo Mein noodles according to the package instructions, boiling them in salted water until just tender, then drain and rinse with cold water.
  • Slice the chicken breasts into thin strips, season lightly with salt, and ensure to slice against the grain.

Cooking

  • Heat a large skillet or wok over medium-high heat and add sesame oil, allowing it to shimmer.
  • Add the sliced chicken in a single layer, stir-frying for 5 to 7 minutes until golden brown and cooked through.
  • Add minced garlic and stir-fry for an additional minute until fragrant.
  • Add sliced bell peppers and carrots, stir-frying for about 3 minutes until just tender.
  • Add the cooked Lo Mein noodles and toss to combine with chicken and vegetables.
  • Pour soy sauce over the mixture, tossing until well-coated and cook for an additional 2-3 minutes.
  • Fold in chopped green onions and cook for about 1 minute more.

Notes
