Ingredients
  

For the Filling

  • 1 tbsp sesame oil adds richness

  • 1 head romaine lettuce serves as the wrap

For the Sauce

  • 1/4 cup hoisin sauce provides sweetness and depth
  • 1 tbsp low-sodium soy sauce adds saltiness and flavor
  • 1 tbsp regular soy sauce enhances umami
  • 1 tbsp rice vinegar provides acidity
  • 1/2 tbsp sesame oil adds richness
  • 2 tsp fresh grated ginger adds warmth and spice
  • 3 garlic cloves, minced imparts aromatic flavor
  • 1 shallot, diced adds a mild onion flavor

Instructions
 

Preparation

  • In a small bowl, combine all the sauce ingredients: hoisin sauce, both soy sauces, rice vinegar, sesame oil, ginger, garlic, and shallot. Whisk until well incorporated.
  • Heat a large skillet over medium-high heat and add 1 tablespoon of sesame oil.

Cooking

  • Once the oil is hot, add the ground chicken. Cook, stirring frequently, until it breaks apart and turns golden-brown, about 5–6 minutes.
  • Stir in diced water chestnuts and shiitake mushrooms, and reduce heat to medium. Mix well.
  • Pour the sauce over the chicken mixture and stir to ensure even coating.
  • Cover the skillet and let cook for a few minutes to allow flavors to meld.
  • Taste and adjust seasoning as needed; remove from heat.

Serving

  • Lay out romaine lettuce leaves on a serving plate. Spoon the chicken mixture generously onto each leaf.
  • Garnish with sliced scallions and serve immediately.

Notes

For best results, use fresh ingredients. Store any leftover filling separately from the lettuce to maintain texture. Can substitute ground chicken with crumbled tofu for a vegetarian option.
