  • 2 cloves garlic, minced enhances flavor profile
  • 1/2 teaspoon black pepper adds a hint of spice

Instructions
 

Preparation

  • Start by cutting the chicken breasts into bite-sized cubes for even cooking.
  • In a reusable container, whisk together the marinade ingredients: olive oil, soy sauce, lemon juice, brown sugar, balsamic vinegar, minced garlic, and black pepper.
  • Add the cut chicken pieces into the marinade and stir to coat well. Cover and refrigerate for at least 30 minutes or up to 24 hours.

Grilling

  • Preheat your grill to medium heat.
  • Assemble the kabobs by skewering pieces of chicken and alternating with the zucchini, red onion, and bell peppers.
  • Place the assembled kabobs on the grill and cook for about 5 to 6 minutes on each side until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  • Remove from the grill and let cool for a couple of minutes before serving.

Notes

For extra flavor, marinate the chicken overnight. Ensure your grill is preheated for better searing. Avoid overcrowding the kabobs on skewers for even cooking.
