Place chicken in the bottom of the crock pot in a single layer.
Add chopped onion, garlic, carrots, and celery over the chicken.
Pour in the chicken broth and diced tomatoes, covering at least half the chicken.
Sprinkle in paprika, salt, and pepper. Stir gently if desired.
Cover and cook on low for 6–7 hours or on high for 3–4 hours.
Once cooked, shred the chicken with two forks inside the pot and stir to combine.
