Ingredients
  

Core Ingredients

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots chopped
  • 2 celery stalks sliced
  • 1 can diced tomatoes undrained
  • 2 cups chicken broth low sodium preferred

Seasonings

  • 1 tsp paprika
  • salt and black pepper to taste

Instructions
 

  • Place chicken in the bottom of the crock pot in a single layer.
  • Add chopped onion, garlic, carrots, and celery over the chicken.
  • Pour in the chicken broth and diced tomatoes, covering at least half the chicken.
  • Sprinkle in paprika, salt, and pepper. Stir gently if desired.
  • Cover and cook on low for 6–7 hours or on high for 3–4 hours.
  • Once cooked, shred the chicken with two forks inside the pot and stir to combine.
  • Taste and adjust seasoning. Serve warm over rice, noodles, or with crusty bread.

Notes

Try stirring in cream cheese, heavy cream, or coconut milk at the end for a creamy version. To thicken the broth, remove the lid for the last 30 minutes or whisk in a cornstarch slurry.
