Marinade Ingredients

  • ½ lb skinless boneless chicken thighs, thinly sliced provides protein and tenderness
  • 1 tsp regular soy sauce or light soy sauce adds depth
  • 1 tsp Shaoxing Cooking Wine or dry sherry / dry white wine / chicken broth adds subtle complexity
  • 1 tsp cornstarch for tenderness and moisture retention in chicken

Fried Rice Ingredients

  • 4 ½ cups cooked jasmine rice, cold day-old for optimal texture
  • 1.5 cups frozen peas and carrots or frozen vegetable mix adds color and nutrition
  • 3 large eggs, beaten binds and adds richness
  • 1 small shallot or ¼ onion, finely diced for aromatic flavor
  • 3 cloves garlic, minced enhances overall taste
  • 4 tsp vegetable oil or any neutral tasting oil for cooking and preventing sticking
  • 2 tbsp regular soy sauce or light soy sauce for sauce, brings savory flavor
  • ½ tbsp dark soy sauce for color and depth
  • 2 tsp sesame oil for a nutty finish
  • 1 tsp chicken bouillon powder enhances savory notes
  • tsp white pepper or black pepper adds gentle heat

Instructions
 

Preparation

  • In a medium-sized bowl, take the sliced chicken thighs and marinate them with the ingredients designated for the marinade. Give it about 5 to 10 minutes to soak in.
  • While the chicken is marinating, prepare the sauce by combining all the sauce ingredients in a small bowl and setting it aside.

Cooking

  • Heat 1 teaspoon of vegetable oil in a large pan over medium-high heat. Add the marinated chicken and cook until no longer pink.
  • Remove the chicken from the pan and set it aside.
  • Add an additional teaspoon of vegetable oil to the pan, then sauté the minced garlic and diced shallots for about 10 seconds.
  • Introduce the frozen peas and carrots, frying them for another 10 seconds.
  • Pour the remaining oil into the pan and add the beaten eggs. Allow them to sit undisturbed for about 20 seconds before scrambling gently.
  • Once the eggs are scrambled, toss in the cooked rice and the previously set aside chicken.
  • Pour the sauce around the edges of the rice mixture. Let it toast for about 5 seconds before tossing everything together until all rice grains are coated.

Notes

Use day-old rice for the best texture. Ensure your pan is hot enough to create a slight char on the rice for added flavor.
