  • 2.25 pounds boneless skinless chicken breasts tender protein
  • 1.5 packets fajita seasoning mix adds flavor
  • 1 cup salsa brings moisture and flavor
  • 3 large bell peppers (mix of colors), deseeded and thickly sliced provides crunch and sweetness
  • 1 large red onion, halved and thickly sliced adds sweetness and texture
  • 1 lime, juiced adds acidity
  • Fresh cilantro for garnish

Preparation

  • Start by placing the chicken breasts into the bottom of a 7-quart slow cooker pot. Lay them out evenly for even cooking.
  • Sprinkle the fajita seasoning over the chicken and pour the salsa on top.
  • Cover the slow cooker with its lid and set it to cook on LOW for 4-6 hours or HIGH for 3-4 hours.
  • During the last hour of cooking, add the thickly sliced peppers and red onion to the slow cooker.
  • Squeeze fresh lime juice over the fajitas just before they finish cooking.
  • When the chicken is cooked through, remove it from the slow cooker and cut it into strips or shred it.
  • Return the chicken to the slow cooker and stir to combine with the peppers and onions.
  • Garnish the chicken fajitas with freshly chopped cilantro and serve with flour tortillas.

Notes

For best results, consider marinating the chicken in the seasoning and salsa overnight. Always check chicken's doneness with a meat thermometer.
