  • 1/2 cup Caesar dressing (store-bought or homemade, adds creaminess)
  • 4 extra-large burrito-sized wraps (holds everything together)

Instructions
 

Preparation

  • Slice the chicken breasts in half horizontally to create thinner fillets. Season with salt and black pepper.
  • Coat the chicken in all-purpose flour in a shallow dish, shaking off excess flour.
  • Beat the eggs in another shallow dish. Dip the flour-coated chicken into the egg mixture, letting any excess drip off.
  • In a third shallow dish, mix the panko breadcrumbs with grated parmesan cheese. Dredge the chicken in this mixture, pressing gently to coat.

Cooking

  • Heat neutral oil in a large skillet over medium heat. Once hot, add the breaded chicken in a single layer.
  • Cook the chicken for about 4-6 minutes on each side until golden brown and cooked through.
  • Transfer the chicken to a paper towel-lined plate to absorb excess oil and allow to rest for a few minutes.

Assembly

  • Chop the romaine lettuce and prepare croutons and shredded parmesan cheese.
  • Slice the cooked chicken into strips or bite-sized pieces.
  • In a large bowl, combine the chicken, lettuce, croutons, and shredded parmesan. Drizzle Caesar dressing over the mixture and toss gently to combine.
  • Place a generous scoop of the mixture in the center of each wrap. Fold the sides in and roll tightly to enclose the filling.
