Instructions
 

Preparation

  • In a medium bowl, combine the Dijon mustard, fresh lemon juice, Worcestershire sauce, mayonnaise, minced garlic, and anchovy paste, then whisk until everything is well blended. Set this dressing aside.
  • Bring a large pot of salted water to a boil. Once boiling, add the uncooked pasta and stir occasionally. Cook until al dente, about 10 minutes.
  • Drain the cooked pasta in a colander and rinse under cold water to stop the cooking process. Then, transfer to a large serving bowl.
  • Cut the Romaine hearts into 1-inch pieces and add them to the bowl with the pasta, along with shredded rotisserie chicken or chopped chicken breasts.

Assembly

  • Pour the prepared dressing over the pasta, Romaine, and chicken. Toss everything together gently until well coated.
  • If desired, sprinkle in croutons and mix gently. Garnish with more Parmesan cheese before serving.

Notes

For best flavor, prepare the salad just before serving. Rinsing pasta prevents stickiness, and use fresh Romaine for the best texture.
