Ingredients
  

Main Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 0.5 cup cream or coconut milk optional, for creamier sauce

Instructions
 

  • Season chicken with salt, pepper, and paprika. Optional: Sear chicken breasts in olive oil over medium heat for 2–3 minutes per side until golden.
  • Place chopped onion and garlic in the bottom of the Crockpot. Add seared (or raw) chicken on top.
  • Pour chicken broth over the chicken. Sprinkle in dried thyme.
  • Cover and cook on LOW for 6 hours or HIGH for 3 hours, until chicken is tender and cooked through.
  • In the last 30 minutes of cooking, stir in cream or coconut milk if using. Let warm through and thicken slightly.
  • Serve warm over rice, mashed potatoes, or steamed vegetables. Garnish with fresh herbs if desired.

Notes

This recipe is flexible — use chicken thighs for more richness or add vegetables like carrots or spinach for extra nutrition. Great for leftovers and easy to customize with different spice blends or sauces.
