  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp salt
  • 0.5 tsp black pepper

Optional Additions

  • 1 cup sliced mushrooms optional
  • 2 cups baby carrots
  • 1 tbsp Worcestershire sauce

Instructions
 

  • Lightly spray the inside of your crockpot with cooking spray to prevent sticking.
  • Layer sliced onions and minced garlic at the bottom of the crockpot.
  • Place chicken breasts on top, ensuring they are evenly spaced and not overlapping.
  • Sprinkle paprika, thyme, salt, and pepper evenly over the chicken.
  • Pour chicken broth around the edges, ensuring it reaches the bottom without covering the chicken entirely.
  • Cover and cook on low for 6–7 hours, or until chicken reaches 165°F and is tender.
  • Let rest for 5 minutes. Then shred with forks for tacos or bowls, or slice and serve with your favorite sides.

Notes

Make-ahead tip: Assemble the ingredients the night before in the insert and refrigerate. In the morning, place it in the crockpot base and start cooking. Leftovers freeze well for up to 3 months.
