Instructions
 

Cooking the Pasta

  • Begin by cooking the penne pasta according to package instructions. Bring a large pot of salted water to a boil, add the penne, and cook until it’s al dente (about 10-12 minutes). Drain, reserving a bit of the water.

Cooking the Bacon

  • Heat a large skillet over medium heat. If needed, add a tablespoon of olive oil. Add the chopped bacon and cook until crispy (about 5-7 minutes), then remove from skillet and set aside.

Cooking the Chicken

  • In the same skillet, add the diced chicken breast. Season with salt and pepper, and cook until no longer pink and lightly golden (about 5-8 minutes). Remove from skillet and set aside with the bacon.

Sautéing Vegetables

  • Add the finely chopped onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion is translucent and fragrant.
  • Add the chopped spinach and cook until wilted (about 1-2 minutes).

Making the Sauce

  • Pour in the heavy cream and chicken broth, stirring to combine and letting it reach a gentle simmer.
  • Add the Italian seasoning, crispy bacon, and cooked chicken back into the skillet and simmer for a couple of minutes.

Combining Pasta and Sauce

  • Toss the cooked penne pasta into the skillet, mixing to coat well in the sauce. Adjust the consistency with reserved pasta water if needed, and stir in the grated Parmesan cheese until melted.

Serving

  • Serve warm, enjoying this comforting meal fresh or as leftovers.

Notes

Add other vegetables if desired, and consider using turkey bacon for a leaner dish. Store leftovers in an airtight container for up to 3 days.
