Instructions
 

Cooking

  • Heat a large, deep skillet over medium-high heat. Add the lean ground beef and finely diced onion. Optionally add the jalapeno. Cook until the beef is browned and onion is softened.
  • Drain any excess grease from the skillet.
  • Stir in the taco seasoning and garlic powder until the meat and onion are well combined.
  • Add the canned diced tomatoes, tomato sauce, and beef broth. Stir to combine.
  • Add the uncooked rice, making sure it is submerged in the mixture, and bring to a gentle boil.
  • Reduce heat to low, cover the skillet, and cook for about 18-20 minutes or until the rice is tender.
  • Sprinkle the shredded cheese over the top, cover again for a few mins until melted.
  • Garnish with chopped cilantro before serving, and enjoy with toppings like sour cream, salsa, and guacamole.

Notes

Adjust the cooking time according to rice type. Drain grease to prevent a heavy dish. Optional spices can enhance flavor.
