  • 1 lb ground beef
  • 1 onion chopped
  • 1 clove garlic minced
  • 1 cup long-grain rice uncooked
  • 2 cups beef broth
  • 10.75 oz cream of mushroom soup 1 can
  • 1 cup cheddar cheese shredded
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 cup fresh parsley chopped, for garnish

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a skillet, brown the ground beef with the chopped onion and garlic over medium heat until fully cooked. Drain excess fat.
  • Stir in uncooked rice, beef broth, cream of mushroom soup, salt, pepper, and paprika. Bring to a simmer for 5 minutes.
  • Transfer mixture to prepared baking dish, spread evenly, and cover tightly with foil. Bake for 25 minutes.
  • Remove foil, top with shredded cheese, and bake uncovered for another 10–15 minutes until cheese is melted and bubbly.
  • Let casserole rest for 5 minutes. Garnish with chopped parsley and serve warm.

Notes

Feel free to customize this casserole with veggies like peas, corn, or bell peppers. For a lighter version, substitute ground turkey. Leftovers are great for lunch or baked into a sandwich roll.
