  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 3 medium potatoes peeled and diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth
  • 1 tbsp fresh parsley chopped, for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks.
  • Add chopped onion and garlic. Cook for 3–4 minutes until onion softens and is fragrant.
  • Stir in diced potatoes, salt, pepper, paprika, and oregano. Mix until potatoes are well coated.
  • Pour in beef broth. Cover skillet and reduce heat to low. Simmer for 20–25 minutes, or until potatoes are tender.
  • Sprinkle shredded cheese evenly over the top. Cover for 2–3 minutes to melt the cheese.
  • Garnish with fresh parsley and serve warm.

Notes

This skillet casserole is flexible and forgiving — add spinach, bell peppers, or mushrooms for extra color and flavor. Serve with salad or bread, or turn leftovers into wraps!
