Preparation

  • Heat the olive oil in a large skillet over medium heat. Add the finely chopped onion and cook until soft and translucent, about 3-4 minutes.
  • Add the minced garlic and stir for about a minute until fragrant, but don't let it brown.
  • Incorporate the ground chicken, breaking it apart. Season with salt, black pepper, Italian seasoning, and red pepper flakes (if using). Cook until fully browned, about 5-7 minutes.
  • Stir in the tomato paste and cook for an additional 2-3 minutes to deepen the flavor.

Cooking

  • Pour in the diced tomatoes and chicken broth, stirring to combine.
  • Add the milk, stirring to blend the ingredients smoothly.
  • Bring the mixture to a gentle boil before adding the pasta, ensuring it's covered by the sauce.
  • Stir occasionally until the pasta is tender and the sauce thickens.
  • Gradually stir in the shredded cheddar and mozzarella cheeses until melted and creamy.
  • Remove from heat, taste and adjust seasoning if necessary.
  • Sprinkle the grated Parmesan cheese and fresh parsley on top before serving.

Notes

For a creamier texture, use whole milk. You can substitute pasta for whole grain or gluten-free options, or add veggies like spinach or bell peppers for extra nutrition. If sauce is too thick, add more chicken broth or milk.
