  • 2 cups chicken (cooked or raw), shredded or finely chopped juicy base for the fritters

  • ½ cup breadcrumbs helps bind the fritters and gives light crunch
  • 1 large egg keeps everything together and gives structure
  • 2 tbsp all‑purpose flour adds body and golden crispiness
  • 2 tbsp green onions, finely chopped a touch of freshness and colour
  • 1 tsp garlic powder brings that cosy savoury depth
  • ½ tsp onion powder enhances the flavour of the chicken
  • ¼ tsp paprika subtle warmth and a hint of colour
  • salt and pepper to taste – essential for balance

Cook‑in Oil & Dip

  • 2 tbsp olive oil for that perfect golden fry
  • dipping sauce (optional – e.g., ranch, honey‑mustard)

Instructions
 

  • In a large bowl, combine shredded chicken, shredded cheddar cheese, breadcrumbs, egg, flour, green onions, garlic powder, onion powder, paprika, salt and pepper. Mix gently until everything is evenly coated and mixture holds together.
  • Scoop out small portions of the mixture and shape them into patties—about two inches wide and one inch thick.
  • Pour olive oil into a large skillet and warm it over medium heat until it shimmers. Carefully place each fritter in the hot oil, spacing them so they crisp properly.
  • Fry for about 3–4 minutes per side, until each one turns golden brown and the kitchen fills with the delicious scent of sizzling cheese.
  • Once cooked, transfer the fritters to a paper‑towel‑lined plate to drain excess oil.
  • Serve the fritters warm with your favourite dipping sauce—ranch, honey mustard, or spicy mayo—and enjoy.

Notes

Use leftover rotisserie chicken to save time. Chill the mixture for 10 minutes before frying if it feels too soft. Don’t overcrowd the pan for best crispiness. These also freeze well and reheat nicely. Variations: substitute mozzarella or Pepper Jack cheese for cheddar for a fun twist.
