Instructions
 

Preparation

  • Preheat your oven to the desired temperature.
  • In a mixing bowl, combine the shredded chicken with the taco seasoning until evenly coated.
  • Add the diced yellow onion to the chicken mixture and stir to incorporate.

Assembly

  • Spread a layer of enchilada sauce on the bottom of your baking dish.
  • Place four tortillas over the sauce, slightly overlapping.
  • Spoon half of the chicken mixture over the tortillas and spread it evenly.
  • Drizzle some enchilada sauce over the chicken layer.
  • Sprinkle a portion of the shredded cheddar cheese over the chicken mixture.
  • Repeat the layering process with another four tortillas, remaining chicken mixture, additional enchilada sauce, and remaining cheese.

Baking

  • Cover the baking dish with aluminum foil.
  • Bake the casserole until heated through and the cheese is melted and bubbly.
  • Let the casserole stand for a few minutes before serving.
