For the casserole

  • 3 cans 10.5 ounce condensed cream of chicken soup Adds creaminess
  • 1 cup chicken broth Provides moisture
  • 2 cups uncooked Minute Rice Acts as the base, cooking while baking
  • 2 cups cooked chicken, shredded or chopped Adds protein and texture
  • 2 cups frozen mixed vegetables Delivers color and nutrients
  • 1 teaspoon garlic powder Enhances flavor
  • 1 teaspoon onion powder Adds depth to the dish
  • 1/2 teaspoon Italian seasoning Provides herbal notes
  • to taste pepper For seasoning
  • 1/2 cup chopped scallions Adds freshness
  • 3 cups grated cheddar, divided Creates a gooey, cheesy topping

Instructions
 

Preparation

  • Preheat your oven to 375°F and position the rack in the middle.
  • In a fairly large bowl, combine the cream of chicken soup and chicken broth, stirring until well blended.
  • Grease a 9×13 casserole dish to prevent sticking.
  • Into the greased casserole dish, add the uncooked rice, cooked chicken, frozen mixed vegetables, garlic powder, onion powder, Italian seasoning, pepper, scallions, and one cup of cheddar.
  • Pour the soup and broth mixture over the ingredients in the casserole dish, tossing everything together until evenly coated.
  • Cover the casserole dish tightly with foil or its lid.

Baking

  • Bake for 45 minutes.
  • Carefully remove the casserole from the oven and remove the foil.
  • Sprinkle the remaining cheese over the top.
  • Return the casserole to the oven and bake uncovered for another 10-15 minutes.

Notes

Consider allowing the casserole to rest for a few minutes before serving. Try adding another layer of cheese on top before the final bake for an extra cheesy finish.
