For the Quesadilla

  • 4 pieces burrito-sized flour tortillas base for quesadilla
  • 16 slices cheddar cheese, thinly sliced for melting
  • ½ cup onion, finely chopped adds texture
  • ½ cup dill pickles, chopped for crunch
  • 1 tablespoon olive oil for frying

Instructions
 

Cooking the Beef

  • Cook the ground beef in a skillet over medium heat, breaking it into small pieces as it cooks.
  • Drain any excess fat once the meat is fully cooked and no longer pink.

Seasoning the Beef

  • Return the cooked beef to the bowl and season with salt, black pepper, garlic powder, and Worcestershire sauce.
  • Mix thoroughly to enhance the flavor.

Making the Sauce

  • Combine mayonnaise, grated onion, ketchup, pickle relish, yellow mustard, white vinegar, and paprika in a separate bowl.
  • Stir until well blended.

Combining Fillings

  • Add the seasoned ground beef to the sauce and mix until well combined.

Assembling the Quesadilla

  • Lay out one tortilla and spread a portion of the beef mixture over half of it.
  • Layer four slices of cheddar cheese on top of the beef.
  • Fold the tortilla over to create a half-moon shape and gently press down.

Cooking the Quesadilla

  • Heat olive oil in the same skillet over medium heat.
  • Place the folded quesadilla in the skillet and cook for 3-4 minutes until golden brown.
  • Flip the quesadilla using a spatula and cook for an additional 3-4 minutes, until the second side is golden and the cheese is melted.

Serving

  • Remove the quesadilla from the skillet and let it cool for a minute before slicing.
  • Serve with additional toppings like chopped dill pickles or extra ketchup.

Notes

Use fresh tortillas for the best texture. Ensure the skillet is preheated for optimal cooking.
