Ingredients
  

For the chicken marinade

  • 1.5 lbs boneless, skinless chicken thighs tender and juicy
  • 2 tablespoons olive oil adds richness
  • 1 tablespoon brown sugar for sweetness
  • 2 teaspoons ground allspice warm, aromatic flavor
  • 1 teaspoon smoked paprika subtle smokiness
  • 1 teaspoon dried thyme herbaceous note
  • 0.5 teaspoon cinnamon warm spice
  • 0.5 teaspoon nutmeg nutty warmth
  • 0.5 teaspoon cayenne pepper gentle heat
  • 3 cloves garlic, minced pungent, savory flavor
  • 1 teaspoon fresh ginger, grated fresh, zesty aroma
  • 1 tablespoon lime juice bright acidity
  • Salt and pepper, to taste for seasoning

For the rice

  • 1 cup jasmine rice fluffy and fragrant
  • 1 cup canned coconut milk full fat, creamy texture
  • 1 cup water for cooking rice
  • 0.5 teaspoon salt for rice seasoning

For the mango salsa

  • 1 ripe mango, diced sweet and juicy
  • 0.5 red bell pepper, diced crunchy, sweet flavor
  • 0.25 red onion, finely chopped sharpness
  • 1 small jalapeño, seeded and minced spicy kick
  • 2 tablespoons fresh cilantro, chopped fresh herb flavor
  • 1 lime Juice of 1 lime added brightness
  • Pinch of salt enhances flavors

For serving

  • Sliced avocado optional, creamy richness
  • Extra lime wedges optional, for serving
  • Fresh cilantro optional, for garnish
  • Shredded lettuce or cabbage optional, crisp texture

Instructions
 

Marinating Chicken

  • In a large bowl, whisk together the olive oil, brown sugar, allspice, smoked paprika, thyme, cinnamon, nutmeg, cayenne pepper, minced garlic, grated ginger, lime juice, and a generous sprinkle of salt and pepper. Ensure the chicken is well coated in the marinade. Cover and let it sit for at least 30 minutes.

Preparing Rice

  • In a medium saucepan, combine the jasmine rice, coconut milk, water, and ½ teaspoon of salt. Bring to a boil over medium heat. Once boiling, reduce heat to low, cover, and let simmer for about 15-18 minutes. Remove from heat and let sit for 5 minutes before fluffing with a fork.

Making Mango Salsa

  • In a small bowl, mix together the diced mango, red bell pepper, chopped red onion, minced jalapeño, cilantro, lime juice, and a pinch of salt. Stir carefully to maintain the integrity of the mango and bell pepper.

Cooking Chicken

  • Heat a skillet or grill pan over medium-high heat. Add the marinated chicken thighs and cook for about 5-6 minutes on each side, until cooked through and golden. Let rest for 5 minutes before slicing.

Assembling Bowls

  • Start with a bed of coconut rice. Top with sliced chicken, followed by a spoonful of mango salsa. Optionally, add sliced avocado, lime wedges, fresh cilantro, or shredded lettuce/cabbage.

Notes

Consider marinating the chicken overnight for deeper flavors. Use freshly squeezed lime juice for brightness. Don't skip the resting step for the chicken to retain juices.
