  • 2 tablespoons oil (for cooking)
  • 2 pieces boneless skinless chicken breasts (about 1 lb) provides the protein base

  • 1 teaspoon corn starch thickens the sauce

Instructions
 

Preparation

  • Begin by heating the oil in a large skillet over medium-high heat.
  • While the oil is heating, prepare the chicken breasts by butterflying them to create four thinner pieces.
  • Pat the chicken dry with a paper towel and season with salt and pepper to taste.

Cooking

  • Cook the chicken for about 5 to 6 minutes on each side until it’s golden brown and cooked through.
  • Add the halved cherry tomatoes to the skillet and cook until they start to blister and soften.
  • In a separate bowl, whisk together the water, balsamic vinegar, basil pesto, honey, garlic, corn starch, salt, and pepper.
  • Pour the sauce into the skillet over the chicken and tomatoes, stirring occasionally until the sauce begins to thicken.
  • Top each piece of chicken with ¼ cup of mozzarella cheese and cover the skillet to melt the cheese.
  • Once the cheese has melted, garnish the chicken with fresh basil leaves.

Notes

Do not overcrowd the skillet when cooking the chicken. Allow it to rest for a few minutes after cooking to keep it juicy. Use fresh ingredients for the best flavor.
