  • 2 tsp Cajun seasoning
  • 1 tsp ground cumin
  • 4 cups shredded cooked chicken rotisserie works well
  • 2 cans white beans rinsed and drained
  • 1 can diced green chiles
  • 4 cups chicken broth
  • 8 oz cream cheese softened and cubed
  • 1 cup shredded Monterey Jack cheese

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion, green bell pepper, and garlic. Sauté until softened, about 5 minutes.
  • Stir in Cajun seasoning and cumin, cooking for 1 minute to release the flavor.
  • Add the shredded chicken, white beans, and diced green chiles. Stir to combine.
  • Pour in the chicken broth and bring the mixture to a gentle simmer. Let cook for 20 minutes.
  • Reduce heat to low. Stir in the cream cheese until fully melted. Add Monterey Jack cheese and stir until smooth.
  • Serve hot, garnished with optional toppings like cilantro, jalapeños, tortilla chips, or avocado.

Notes

Make it spicier with jalapeños or hot sauce, or keep it mild for kids. This chili freezes well and is naturally gluten-free. Use rotisserie chicken for quicker prep.
