Main Ingredients

  • 2 tbsp olive oil
  • 1 medium onion diced
  • 1 green bell pepper diced
  • 2 cloves garlic minced
  • 2 tbsp Cajun seasoning
  • 4 cups chicken broth
  • 2 cans great northern beans 15 oz each, rinsed and drained
  • 1 can corn 15 oz, drained
  • 1 lb chicken breast cooked and shredded
  • 4 oz cream cheese cubed

Instructions
 

  • Heat olive oil in a large pot over medium heat. Sauté onion, bell pepper, and garlic until softened, about 5 minutes.
  • Stir in Cajun seasoning and let it bloom in the oil for 1 minute.
  • Add chicken broth, beans, and corn. Bring to a simmer and cook for 10 minutes.
  • Stir in shredded chicken and reduce heat to low.
  • Add cubed cream cheese and stir until melted and creamy.
  • Taste and adjust seasoning with salt, pepper, or more Cajun spice as needed. Serve hot with your favorite sides.

Notes

Make it your own: swap in rotisserie chicken for ease, or try cream-style corn for added sweetness. To reduce heat for kids, simply use less Cajun seasoning. For extra richness, stir in a splash of half-and-half before serving.
