  • 1.25 lb 93% ground chicken For a lean protein base
  • 1/4 cup panko crumbs Adds lightness and texture
  • 1 large egg Binds the mixture
  • 2 pieces scallions, chopped For fresh flavor
  • 1/3 cup finely minced celery Adds moisture and crunch
  • 1/3 cup finely minced carrot Provides natural sweetness
  • 1 clove crushed garlic Enhances flavor
  • to taste Kosher salt and freshly ground black pepper For seasoning
  • 1/3 cup Franks Hot sauce Brings heat and flavor
  • 1/4 cup blue cheese dressing Optional, for creaminess
  • to taste finely chopped celery leaf for garnish Optional, for freshness

Instructions
 

Preparation

  • Preheat the oven to 400°F.
  • Lightly spray a non-stick baking sheet with oil.
  • In a large bowl, combine the ground chicken, panko crumbs, egg, scallions, celery, carrot, and garlic. Season with salt and pepper to taste.
  • Using clean hands, mix the ingredients until combined.
  • Roll the mixture (1/8 cup each) into 26 round meatballs.
  • Place the meatballs onto the prepared baking sheet and bake until cooked through and golden, about 16 to 18 minutes.
  • Place the meatballs in a bowl, add the buffalo sauce, and gently toss to combine.

Notes

Use fresh ingredients for the best flavor. For a variation in dipping sauce, ranch dressing can be a nice alternative to blue cheese.
