Preparation

  • Begin by cooking the chicken. Place the three large boneless skinless chicken breasts in a pot of boiling water, allowing them to cook for approximately 25 minutes until fully cooked. Once done, remove the chicken from the pot and allow it to cool slightly. Once cool, shred the chicken into bite-sized pieces.
  • Preheat your oven to 350°F. While it warms, prepare a baking pan by spraying it with non-stick spray.
  • In a medium saucepan, combine the cubed cream cheese, ranch dressing, hot sauce, freshly ground black pepper, and garlic powder. Heat this mixture over medium heat, stirring regularly, until it becomes smooth and well blended. Keep mixing until there are no lumps.
  • Once the sauce is smooth, mix in the shredded chicken and chopped green onion. Then, add 1 cup of the mozzarella cheese and 1 cup of cheddar cheese to the mixture. Stir until everything is evenly coated with the sauce.
  • Transfer the entire chicken and cheese mixture into your prepared baking pan. Spread it out evenly. Top with the remaining shredded mozzarella and cheddar cheese.
  • Place the baking pan in the oven and bake for 20-30 minutes until the cheese is melted and bubbling.
  • Finally, broil the Buffalo Chicken Dip for an additional 2-3 minutes until it turns golden brown on top.
  • Once ready, remove it from the oven and let it cool slightly before serving.

Notes

Serve with chips, fresh veggies, or in tortillas. Store leftovers in the refrigerator for 3-5 days.
