Instructions
 

Preparation

  • Chop the medium yellow onion. Heat a large pot or Dutch oven over medium heat and add the onion. Sauté until translucent and tender, about 3-4 minutes.
  • Add the boneless, skinless chicken breasts or thighs to the pot. Stir with the onion and cook for about 5-7 minutes until slightly browned.
  • Pour in the hot sauce, garlic powder, smoked paprika, and chipotle chili powder. Stir to combine and cook until fragrant.
  • Add the fire roasted diced tomatoes, mixing thoroughly.
  • Chop and add poblano and jalapeño peppers along with chopped celery. Stir well.
  • Pour in the bone or chicken broth and bring to a simmer, cooking for 5-6 minutes.
  • Add the salted butter and stir until melted. Simmer for a few more minutes.
  • Season with salt and black pepper to taste. Remove from heat.
  • Melt Greek yogurt or cream cheese in a microwave and stir into the pot.
  • Garnish with chopped fresh cilantro before serving.

Notes

Store leftovers in airtight containers for up to 3-4 days or freeze for up to 3 months. Adjust spice levels by varying hot sauce amount.
