Preparation

  • In a mixing bowl or freezer bag, combine all the marinade ingredients: olive oil, lemon juice, soy sauce, balsamic vinegar, brown sugar, Dijon mustard, onion powder, garlic powder, salt, dried basil, oregano, thyme, paprika, black pepper, and red pepper flakes. Use a whisk or fork to thoroughly blend the ingredients.
  • Add the chicken pieces to the bowl or bag, ensuring they are completely immersed in the marinade. If using a bowl, turn the chicken a few times to coat well. If using a bag, seal it and gently massage the marinade into the chicken.
  • Allow the chicken to marinate for at least 30 minutes at room temperature, or refrigerate for up to 12 hours for maximum flavor.

Cooking

  • When ready to cook, take the marinated chicken out of the refrigerator and let it rest for 15 to 30 minutes.
  • For grilling, preheat your grill to 400°F. Clean the grates and lightly grease to prevent sticking. Place the chicken on the grill and cook undisturbed for 5 to 7 minutes on each side until the internal temperature reaches 165°F.
  • For stovetop cooking, heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat. Cook the marinated chicken for about 3 to 4 minutes, checking for a golden-brown crust before flipping. Cover and reduce heat to medium, cooking for an additional 5 to 7 minutes.
  • For baking, preheat your oven to 425°F. Drain the chicken from the marinade and place it in a greased baking dish. Bake uncovered for 16 to 18 minutes, checking that the internal temperature reaches 165°F.

Notes

Allowing the chicken to marinate longer enhances flavor. Letting it rest before cooking helps retain moisture. Use a meat thermometer to check doneness.
