Preparation

  • Add the cream of chicken soup to the yogurt mixture, stirring until fully incorporated.
  • Gently fold in the shredded rotisserie chicken, chopped broccoli, and diced onion.
  • Season with kosher salt to taste, ensuring a balanced flavor.
  • Fold in the shredded cheddar cheese until evenly distributed.
  • Stir in the cooked rice until all ingredients are well combined.
  • Pour the mixture into a greased baking dish, spreading it out evenly.

Topping Preparation

  • In a small bowl, combine the crushed whole wheat crackers and melted butter, stirring until coated.
  • Sprinkle the buttery cracker mixture evenly over the casserole.

Baking

Notes
