Instructions
Preheat oven to 400°F (200°C). Place cherry tomatoes in a baking dish. Drizzle with olive oil and season with salt and pepper.
Place the Boursin cheese in the center of the baking dish, nestled among the tomatoes. Bake for 25–30 minutes, until the tomatoes blister and cheese is soft and melted.
Meanwhile, cook pasta according to package directions. Reserve 1/4 cup of pasta water, then drain.
Remove the baking dish from the oven and stir the tomatoes and melted cheese together to create a creamy sauce.
Add cooked pasta and a splash of pasta water to the sauce. Stir until everything is evenly coated and creamy.
Top with fresh basil if desired and serve warm.
Notes
Use cream cheese with herbs as a substitute if Boursin isn’t available. Add veggies like spinach or zucchini, grilled protein, or red pepper flakes for heat. Gluten-free and vegan options also work with proper swaps.
