Boursin Cheese Baked Pasta

This viral baked pasta with Boursin cheese is creamy, garlicky, and ridiculously simple. Just bake cherry tomatoes with a puck of Boursin, stir in cooked pasta, and you’ve got a cheesy, herby hug in a bowl.

Ingredients
  

Main Ingredients

  • 2 pints cherry tomatoes
  • 1 package Boursin cheese garlic & herb flavor
  • 3 tbsp olive oil drizzled over tomatoes and cheese
  • 12 oz pasta penne, rigatoni, or similar
  • 1 tsp salt plus more for pasta water
  • 1/2 tsp black pepper freshly cracked

Optional

  • 2 cups fresh spinach stirred in at the end
  • 1/4 cup fresh basil torn

Instructions
 

  • Preheat oven to 400°F (200°C). Place cherry tomatoes in a baking dish. Add the Boursin cheese in the center. Drizzle with olive oil and season with salt and pepper.
  • Bake for 30–35 minutes, until tomatoes burst and cheese is soft and golden at the edges.
  • Meanwhile, cook pasta in salted water until just shy of al dente. Reserve 1/2 cup pasta water before draining.
  • Stir baked tomatoes and melted Boursin together in the dish to form a creamy sauce.
  • Add cooked pasta to the baking dish and toss to coat. Add a splash of pasta water if needed for a silky sauce.
  • Stir in spinach or basil if desired. Serve hot with extra black pepper.

Notes

For a substitute, use cream cheese mixed with garlic powder and herbs, goat cheese, or a feta + cream blend. Avoid hard cheeses as they won’t melt properly. Save leftover pasta water to adjust consistency.
