  • 4 bone-in chicken thighs skin-on or skinless, your choice
  • salt and pepper to taste
  • paprika optional, for flavor
  • 1/2 onion chopped or sliced (optional)
  • 2 cloves garlic optional, peeled
  • 1/2 cup sauce of choice e.g. barbecue, teriyaki, lemon garlic

  • carrots, potatoes, or bell peppers cut in large chunks

Instructions
 

  • Season chicken thighs generously with salt, pepper, and paprika (if using).
  • Optional: brown thighs in a skillet for deeper flavor, then transfer to the crockpot.
  • Place chicken thighs in the slow cooker. Add onions, garlic, and optional chopped vegetables around the chicken.
  • Pour your sauce of choice over the chicken. Do not add too much liquid; thighs release juices as they cook.
  • Cover and cook on LOW for 5–6 hours or HIGH for 2–3 hours, until chicken is tender and reaches 165°F internally.
  • Serve hot with your favorite side dishes or shred for sandwiches, tacos, or salads.

Notes

Keep the lid closed during cooking to maintain moisture and heat. For added texture, broil finished chicken thighs for 2–3 minutes to crisp the skin. Leftovers store well in the fridge for 3 days or freezer up to 3 months.
