Cooking the Chicken

  • Start by heating a skillet or griddle over medium heat. Add a small amount of cooking oil, allowing it to coat the surface evenly.
  • Season the chicken thighs (or breasts) generously with kosher salt, pepper, and BBQ seasoning blend.
  • Cook the chicken in the preheated skillet until it reaches a golden-brown color.
  • Add the BBQ sauce and hot honey to the skillet, stirring to coat the chicken evenly.
  • Remove the chicken from the skillet once fully combined and allow it to cool slightly before chopping it into bite-sized pieces.

Assembling the Quesadillas

  • In a clean skillet over medium heat, lay down one flour tortilla. Spread a layer of the chopped chicken mixture across one half of the tortilla.
  • Sprinkle shredded cheese generously on top of the chicken.
  • Carefully fold the tortilla over to create a half-moon shape and press down gently with a spatula.
  • Cook until the first side is golden and the cheese is melted, then flip to cook the other side until browned.
  • Transfer each finished quesadilla to a cutting board and let rest before slicing into wedges.
