Instructions
 

Preparation

  • Wash the red potatoes thoroughly and cut them into quarters.
  • Place the potatoes in a large pot, cover with water, and add kosher salt.
  • Bring to a boil and cook until fork-tender, around 15-20 minutes.

Cooking Chicken

  • Heat a skillet or griddle over medium heat with cooking oil.
  • Season chicken with salt and pepper, then cook until nicely browned and cooked through, 7-10 minutes per side.

Bacon and Mixing

  • Remove chicken from skillet, rest for a few minutes, then chop or shred.
  • Cook bacon in the same skillet until crispy, about 5-7 minutes, then chop into small pieces.
