For the chicken

  • 2 tbsp water helps dissolve the cornstarch
  • 0.33 cup reserved marinade for finishing the dish
  • 2 tbsp oil for heating on the griddle prevents sticking

Instructions
 

Preparation

  • Mix bourbon, soy sauce, brown sugar, apple cider vinegar, minced garlic, and grated ginger in a mixing bowl until the brown sugar dissolves. Set aside one-third of this marinade in another container.
  • Add the chicken thighs to the remaining marinade, ensuring they are well-coated. Let them sit for about 30 minutes.

Cooking

  • Heat the oil on the Blackstone griddle over medium-high heat until it shimmers.
  • Add the marinated chicken pieces and cook, stirring frequently, for about 10 to 12 minutes until cooked through and caramelized.
  • In a small bowl, mix cornstarch with water until smooth. Pour this mixture into the reserved marinade and stir well.
  • Add the thickened sauce to the cooked chicken on the griddle and cook for an additional 2 to 3 minutes until the sauce clings to the chicken.

Serving

  • Garnish Bourbon Chicken with sesame seeds and chopped green onions before serving.

Notes

Allow the chicken to marinate for at least 30 minutes. Ensure the oil is hot before adding chicken for a good sear. Serve over rice or alongside stir-fried vegetables for a complete meal.
