Preparation

  • Begin by cutting the chicken breasts into bite-sized pieces.
  • In a mixing bowl, combine the bourbon, soy sauce, brown sugar, apple cider vinegar, minced garlic, and minced ginger. Stir gently until the sugar is fully dissolved.
  • Add the bite-sized chicken pieces into the bowl with the sauce and coat them evenly. Let the chicken marinate for at least 30 minutes.

Cooking

  • Preheat your grill or griddle over medium heat, lightly coating the surface with cooking oil.
  • Carefully place the marinated chicken pieces onto the grill in a single layer.
  • Cook the chicken for about 6-8 minutes, turning it occasionally until golden brown.
  • Once the chicken is fully cooked, pour the remaining marinade over the chicken during the last couple of minutes of cooking.
  • Taste and adjust with salt and pepper as needed.
  • Remove the chicken from the grill and let it rest for a few minutes before serving.
  • Serve the bourbon chicken warm, over rice or alongside fresh vegetables.

Notes

To store leftovers, let the chicken cool completely and transfer to an airtight container. It can last in the fridge for 3-4 days or be frozen up to three months. Reheat gently to maintain texture.
