Ingredients
  

Filling

  • 2 cups cooked chicken shredded or cubed
  • 1 cup frozen mixed vegetables peas, carrots, corn, green beans
  • 1 can cream of chicken soup 10.5 oz
  • 1 cup chicken broth
  • 1 cup milk
  • salt and pepper to taste

Biscuit Topping

  • 1 cup Bisquick mix
  • 1/2 cup milk for Bisquick topping
  • 1 egg

Instructions
 

  • Preheat oven to 400°F (200°C). Grease a 9x9-inch baking dish or deep pie dish.
  • In a medium bowl, combine cooked chicken, frozen vegetables, cream of chicken soup, chicken broth, milk, salt, and pepper. Pour into prepared baking dish.
  • In another bowl, whisk together Bisquick mix, ½ cup milk, and egg until smooth. Pour evenly over the chicken mixture.
  • Bake uncovered for 30–35 minutes or until the topping is golden and a knife inserted comes out clean.
  • Let cool for 5 minutes before serving.

Notes

Use rotisserie chicken for extra flavor and convenience. Customize with your favorite veggies or herbs like thyme and parsley. The pot pie filling should be thick but not soupy—follow measurements carefully.
