Ingredients
  

Soup Base

  • 1 tbsp olive oil
  • 2 carrots peeled and sliced
  • 2 celery stalks sliced
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 8 cups chicken broth low sodium
  • 1 bay leaf
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper

Chicken

  • 1.5 pounds chicken breasts or thighs boneless, skinless
  • 2 sprigs fresh thyme

Noodles & Finishing

  • 4 cups egg noodles or pasta of choice
  • 1/4 cup fresh parsley chopped
  • 1 tbsp lemon juice freshly squeezed

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add carrots, celery, and onion. Cook for 7–8 minutes, stirring occasionally, until vegetables soften.
  • Add garlic and cook for 1 more minute, until fragrant. Season lightly with salt and pepper.
  • Pour in chicken broth. Add bay leaf, thyme, and chicken breasts or thighs. Bring to a boil, then reduce to a gentle simmer. Cover and cook for 20–25 minutes, or until chicken is fully cooked.
  • Remove the chicken and set aside to cool slightly. Skim foam or excess fat from the top of the broth.
  • Shred the cooked chicken into bite-sized pieces using two forks. Return the chicken to the pot.
  • In a separate pot, cook noodles until al dente. Drain and rinse briefly under cool water to stop cooking.
  • Stir noodles into the soup. Add parsley and lemon juice. Taste and adjust seasoning if needed. Serve warm.

Notes

Store soup and noodles separately if making ahead to prevent sogginess. For extra veggies, add spinach, zucchini, or peas at the end. Can be frozen—just omit noodles and add fresh when reheating.
