Ingredients
  

For the kabobs

  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces Ensure all pieces are uniform for even cooking.
  • 1.5 cups fresh pineapple, cut into 1-inch chunks
  • 1 piece red bell pepper, cut into 1-inch pieces
  • 1 piece yellow bell pepper, cut into 1-inch pieces
  • 1 piece green bell pepper, cut into 1-inch pieces
  • 0.5 piece red onion, cut into 1-inch pieces
  • 1 cup BBQ sauce Choose a BBQ sauce you enjoy for best flavor.
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 pieces skewers Use wooden skewers soaked in water for at least 30 minutes.

Instructions
 

Preparation

  • Cut the chicken and vegetables into uniform 1-inch pieces to ensure even cooking.
  • If using wooden skewers, soak them in water for at least 30 minutes.

Marinade

  • In a mixing bowl, whisk together the BBQ sauce, olive oil, soy sauce, garlic powder, smoked paprika, salt, and black pepper.
  • Add the chicken pieces and toss to coat thoroughly. Allow the chicken to marinate for at least 30 minutes.

Assembly

  • Thread marinated chicken, pineapple chunks, and pieces of bell peppers and red onion onto the skewers, leaving space between each piece.

Grilling

  • Preheat the grill to medium-high heat, around 375-400°F.
  • Place the skewers on the grill and cook for approximately 10-15 minutes, turning often. Brush with additional BBQ sauce during the last few minutes.
  • The kabobs are done when the chicken reaches an internal temperature of 165°F and shows a nice, golden color.

Serving

  • Let the kabobs rest for a few minutes before serving with extra BBQ sauce on the side.

Notes

For best results, ensure even cutting of chicken and veggies, soak wooden skewers to avoid burning, and let kabobs rest to enhance flavor.
