Instructions
 

Preparation

  • Season the chicken breasts or thighs with salt and pepper to enhance the natural flavors.
  • Grill or pan-sear the seasoned chicken over medium heat until fully cooked, about 6-8 minutes per side, until golden brown and a meat thermometer reads 165°F. Allow to rest for a few minutes.
  • Slice the lettuce and dice the tomatoes after the chicken has rested.
  • Rinse and drain the black beans.
  • Ensure the corn is grilled or charred before adding.
  • Dice the avocado into small pieces just before mixing.
  • Slice or dice the red onion according to preference.
  • Tear the cilantro into smaller pieces.

Assembly

  • Combine all prepared ingredients in a large mixing bowl and toss gently to distribute.
  • Drizzle the avocado dressing or cilantro lime ranch dressing over the salad and toss again lightly.

Notes
