Ingredients
  

Chicken and Base Ingredients

  • ½ lb chicken breast tenderloins or 1 cup diced precooked chicken, salt & pepper to taste
  • 2 teaspoon olive oil
  • ¼ cup BBQ sauce such as Sweet Baby Ray's, plus more for topping if desired

Salad Ingredients

  • 1 heart romaine lettuce, chopped into bite-sized pieces (about 5 cups)
  • ½ cup canned black beans drained and rinsed
  • ½ cup canned sweet corn drained
  • ½ cup tomatoes, diced
  • ¼ cup green onions, diced
  • ½ medium avocado, diced
  • ¼ cup pepper jack cheese, shredded
  • 2 tablespoon fresh cilantro, chopped

Dressing and Toppings

  • ¼ cup Magical Chipotle Ranch Dressing or your favorite bottled ranch dressing, more or less to taste
  • ¼ cup tortilla strips

Instructions
 

Preparation

  • Season the chicken breast tenderloins or diced precooked chicken with salt and pepper.
  • In a skillet over medium heat, warm the olive oil.
  • Add the seasoned chicken to the skillet and cook for about 4-5 minutes on each side for tenderloins, or until heated through if using precooked chicken.
  • Once cooked, brush the chicken with BBQ sauce and allow it to sizzle for 1-2 minutes.

Salad Assembly

  • Chop the romaine lettuce into bite-sized pieces and transfer to a large mixing bowl.
  • Add the drained and rinsed black beans to the bowl.
  • Incorporate the drained sweet corn into the salad bowl.
  • Dice the tomatoes and add them to the mixture.
  • Sprinkle the diced green onions into the salad.
  • Cut the avocado into cubes and gently fold them into the salad.
  • Add the shredded pepper jack cheese to the bowl.
  • Toss in the fresh cilantro.
  • Drizzle the dressing over the salad and gently toss until evenly coated.

Serving

  • Dish out the salad into serving bowls and top with any remaining BBQ sauce and tortilla strips for added crunch.

Notes

Serve fresh for optimal taste. Adjust dressing to preference and add tortillas just before serving to maintain their crunch.
