Ingredients
  

Chicken and Seasoning

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1 to 1.5-inch chunks This size ensures even cooking.
  • 1 tablespoon olive oil Adds moisture and helps with grilling.
  • 1 teaspoon salt Enhances overall flavor.
  • ½ teaspoon black pepper Adds mild heat.
  • ½ teaspoon garlic powder Optional; for extra flavor.
  • ½ teaspoon smoked paprika Optional; for a subtle smokiness.
  • 8-10 pieces skewers (wooden or metal) Soak wooden skewers in water if using.

Bang Bang Sauce

  • ½ cup mayonnaise or ¼ cup mayo + ¼ cup Greek yogurt For a lighter option; adds creaminess.
  • 2 tablespoons sriracha Adjust to taste; provides heat.
  • 1 tablespoon honey or sugar Balances spice with sweetness.
  • 1 tablespoon rice vinegar or lime juice Adds acidity.
  • 1 tablespoon chopped green onions Optional garnish; adds freshness.
  • 1 teaspoon sesame seeds Optional garnish; adds crunch.

Instructions
 

Preparation

  • Cut the chicken into chunks measuring between 1 to 1.5 inches. Pat dry with paper towels, and season with salt, black pepper, garlic powder, and smoked paprika. Drizzle with olive oil and toss to combine.
  • In a small bowl, combine mayonnaise, sriracha, honey, and rice vinegar or lime juice. Stir until smooth. Adjust the spice and sweetness according to taste.
  • Thread the seasoned chicken onto skewers, alternating with vegetables if desired. Ensure the chicken is packed snugly but not tightly.

Cooking

  • Preheat the grill to medium-high. Place the skewers on the grill and cook for about 10 to 12 minutes, turning occasionally until the chicken is golden brown and cooked through.
  • During the last few minutes of grilling, brush the skewers with the bang bang sauce for extra flavor. Alternatively, drizzle remaining sauce over skewers after grilling.
  • Remove skewers from the grill and garnish with green onions and sesame seeds. Serve warm with extra sauce on the side.

Notes

For the best results, soak wooden skewers in water for 30 minutes. Cut chicken pieces uniformly and adjust sauce levels to your preference. Resting the skewers after grilling enhances juiciness.
