  • 2 Tbsp. avocado oil or other high-heat oil for grilling
  • Kosher salt enhances flavor
  • Fresh black pepper adds spice

Preparation

  • Begin by preparing the marinade. In a mixing bowl, combine the balsamic vinegar, honey, avocado oil (or olive oil), minced garlic, Italian seasoning, and Dijon mustard. Whisk until well blended.
  • Pound the chicken breasts to an even thickness, about half an inch thick, ensuring even cooking.
  • Season both sides of the chicken with Kosher salt and fresh black pepper.
  • Place the seasoned chicken into the bowl with the marinade and coat thoroughly. Cover and let marinate for at least 30 minutes.
  • Prepare the grape tomatoes and mozzarella balls by cutting the tomatoes in half and setting aside.

Cooking

  • After marinating, thread the chicken pieces onto skewers, alternating with grape tomatoes and mozzarella balls.
  • Preheat your grill or grill pan over medium-high heat, drizzling some avocado oil to prevent sticking.
  • Grill the skewers until the chicken is cooked through, monitoring for optimal doneness.
  • Once cooked, remove from the grill and sprinkle with finely chopped fresh basil, if desired.
  • Serve warm with your preferred sides.

Notes

Cut chicken into uniform pieces for even cooking. Let the chicken marinate longer for fuller flavor. For wooden skewers, soak them in water for 30 minutes to prevent burning.
