Instructions
 

Preparation

  • Soak the wooden skewers in water for 30 minutes to prevent burning while grilling.
  • Cut the boneless, skinless chicken breasts into 1-inch cubes.
  • In a large bowl, combine the chicken cubes with olive oil, paprika, garlic powder, kosher salt, and black pepper. Toss until well-coated.
  • Thread the coated chicken pieces onto the soaked skewers, leaving some space between pieces.

Cooking

  • Preheat the grill or grill pan over medium heat.
  • Place the skewers on the grill, cooking for about 10-15 minutes, turning occasionally, until the chicken is golden and cooked through.

Sauce Preparation

  • In a separate bowl, whisk together mayonnaise, Thai sweet chili sauce, Sriracha, and honey until smooth.

Serving

  • Remove skewers from the grill and let them rest for a few minutes.
  • Serve warm, drizzled with the sauce or with it on the side for dipping.

Notes
