For the Bang Bang Sauce

  • 0.5 cup mayonnaise (or ¼ cup mayo + ¼ cup Greek yogurt for a lighter option) Use high-quality mayonnaise for best results.
  • 2 tablespoons sriracha (adjust to taste) Adjust based on your heat preference.
  • 1 tablespoon honey or sugar
  • 1 tablespoon rice vinegar or lime juice
  • 1 tablespoon chopped green onions (optional, for garnish)
  • 1 teaspoon sesame seeds (optional, for garnish)

Preparation

  • Begin by cutting the chicken into chunks of about 1 to 1.5 inches, ensuring even pieces for uniform cooking.
  • In a mixing bowl, combine the olive oil, salt, pepper, garlic powder, and smoked paprika if you’re using them.
  • Add the chicken pieces to the bowl and toss them well until they are evenly coated with the seasoning mixture.
  • Set aside the chicken to marinate for about 15-30 minutes if you have time, or you can cook it right away.
  • If you’re using wooden skewers, soak them in water for about 30 minutes.
  • Thread the marinated chicken onto the skewers, making sure the pieces are close together but not overcrowded.

Cooking

  • Preheat your grill or grill pan over medium-high heat.
  • Place the skewers on the grill, ensuring they are not touching each other.
  • Cook the skewers for about 10-15 minutes, turning them occasionally until they are golden brown and cooked through.
  • In a separate bowl, mix together the mayonnaise, sriracha, honey or sugar, and rice vinegar or lime juice until smooth.
  • Once the chicken is grilled, let the skewers rest for a few minutes before serving.
  • Serve the skewers drizzled or dipped with the Bang Bang sauce and garnish with green onions and sesame seeds if desired.

Notes

Ensure chicken is uniform in size for even cooking. Adjust spice level according to preference. Letting chicken rest after grilling keeps it juicy.
