Preparation

  • Preheat your oven to 400°F and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine cornflakes, grated parmesan, smoked paprika, onion powder, and garlic powder.
  • In a separate shallow dish, whisk together beaten eggs and hot sauce.

Coating the Chicken

  • Dip each chicken tenderloin into the egg and hot sauce mixture, coating thoroughly.
  • Allow excess egg mixture to drip off before pressing chicken into the cornflake mixture.
  • Press cornflakes firmly onto chicken, ensuring even coating.

Baking

  • Arrange coated chicken on the baking sheet in a single layer.
  • Drizzle lightly with extra virgin olive oil.
  • Bake for 20–25 minutes until golden brown and cooked through.

Hot Honey Glaze

  • In a small saucepan, combine honey, hot sauce, cayenne pepper, chipotle chili powder, garlic powder, onion powder, and sea salt.
  • Stir over low heat until combined.

Finishing Touch

  • Brush hot honey glaze over baked chicken.
  • Let chicken sit for a few minutes for the glaze to set.
  • Serve with fresh herbs on top.

Notes

Make sure to crush the cornflakes finely for a better coating. Allow the chicken to sit at room temperature for about 10 minutes before baking for more even cooking.
