Preparation

  • Add the lime juice, cumin, chili powder, onion powder, minced garlic, chopped cilantro or parsley, and diced scallions to the cream cheese mixture. Mix everything thoroughly.
  • Fold in the shredded cooked chicken and pepperjack cheese until well incorporated.
  • Preheat your oven to the recommended temperature before wrapping the taquitos.

Assembly

  • Place a portion of the chicken and cheese mixture along one edge of a tortilla and roll it tightly around the filling.
  • Repeat the process with all tortillas, placing them seam-side down on a baking sheet lined with parchment paper.
  • Lightly spray the tops with cooking spray and sprinkle with kosher salt.
