  • 1 1/2 cups Grated Mozzarella Cheese Or 4-8 slices of fresh mozzarella.

Instructions
 

Preparation

  • Preheat your oven to 425 degrees.
  • Place the chicken breasts in a baking dish or cast-iron skillet in a single layer.
  • Drizzle the chicken with olive oil and sprinkle with dried basil, oregano, garlic powder, salt, and pepper.
  • Add the halved tomatoes and diced onion around the chicken.
  • Drizzle balsamic vinegar over the chicken and sprinkle with brown sugar.

Cooking

  • Bake in the oven for 18-24 minutes until the chicken reaches an internal temperature of 165 degrees.
  • Sprinkle mozzarella cheese over the top and broil on the top rack for about 5 minutes until melted and bubbly.
  • Remove from the oven and sprinkle with fresh basil or Italian parsley if desired.

Notes

Serve alongside rice or a garden salad for a complete meal. Chicken can be used in breakfast wraps or over toasted bread for an easy snack. For best results, ensure chicken is of even thickness and allow it to rest after baking.
