Ingredients
  

  • 1.5 lbs chicken breast or thighs cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika or smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: chili flakes dried herbs, or lemon zest

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or foil.
  • In a bowl, toss chicken with oil and seasonings.
  • Spread cubes in a single layer — not touching.
  • Bake for 15–20 minutes, flipping once halfway through.
  • Check that internal temp hits 165°F.
  • Let rest 2–3 minutes before serving.

Notes

Pat chicken dry before seasoning for better browning. Use a wire rack for extra crisp. Don’t overcrowd the pan.
