Chicken and Seasoning

  • 4 pieces small chicken breasts protein-rich and tender
  • 3 tbsp olive oil, divided adds moisture and flavor

  • 2 cloves garlic, minced provides aromatic depth
  • 1 tbsp balsamic vinegar adds acidity

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Lay the chicken breasts on a cutting board and cover them with plastic wrap. Pound the chicken to an even thickness using a meat mallet or rolling pin.
  • Drizzle the chicken with 1 tablespoon of olive oil and rub Italian seasoning and salt into the chicken.

Cooking

  • Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Add the chicken, searing for 3-4 minutes until golden brown.
  • Flip the chicken and sear for an additional 2-3 minutes. Remove from heat.
  • Add sliced grape tomatoes and minced garlic around the chicken. Drizzle with remaining olive oil and balsamic vinegar.
  • Bake the chicken in the preheated oven for 15-25 minutes or until it reaches an internal temperature of 165°F (74°C).
  • Remove from the oven and top the chicken with pearl mozzarella cheese, then broil for 2-3 minutes until bubbly and golden.
  • Sprinkle with fresh basil and drizzle with balsamic glaze before serving.

Notes

For best results, pound chicken to even thickness, marinate chicken in olive oil and seasoning ahead of time, and watch the cheese closely while broiling to avoid overcooking.
